This is a great recipe to use up left over chicken or turkey. What is so wonderful about this recipe is that it can be prepared the night before, making it a great dinner option to have ready for one of those evenings the family has many activities to get to.
Ingredients
- 3/4 cup onions , chopped3/4 3/4cup cuponiononions, chopped
- 3/4 cup celery , chopped3/4 3/4cup cupcelery, chopped
- 1/2 cup green pepper , chopped1/2 1/2cup cupgreen pepper, chopped
- 3 cups chickens , diced3 3cups cupschickenchickens or turkey, diced
- 1/2 cup pimento 1/2 1/2cup cuppimento
- 1-1/2 cups mushroom pieces and stem , (drained)1-1/2 1-1/2cups cupsmushroom pieces and stem, (drained)
- 1/2 cup mayonnaise 1/2 1/2cup cupmayonnaise
- 12 slices bread , buttered, and crusts removed12 12slices slicesbread, buttered, and crusts removed
- 3/4 cup milk 3/4 3/4cup cupmilk
- 3 eggs 3 3eggeggs
- 1 large can mushroom soup 1 1large can large canmushroom soup
- 1 cup Cheddar cheese , shredded1 1cup cupCheddar cheese, shredded
Preparation
Spray a 9x13" pan with cooking spray. Line the bottom with 6 slices of buttered bread. Combine all of the other ingredients and pour half the meat mixture over the bread. Place 6 more slices of bread over the meat mixture. Pour the remaining half of the meat mixture over the second layer of bread. Lightly beat the milk with the eggs and pour over the casserole. Spread the mushroom soup on top and sprinkle with shredded cheddar. Cover and let stand overnight in the refrigerator. Uncover and bake at 325 deg. F. for 45 minutes.
