Ingredients
- 4 cups water 4 4cups cupswater
- 4 halves chicken breasts, boneless, skinless 4 4halves halveschicken breast, boneless, skinlesschicken breasts, boneless, skinless
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/2 tsp pepper 1/2 1/2tsp tsppepper
- 1 tbsp dried parsley 1 1tbsp tbspdried parsley
- 2-1/2 cubes chicken bouillon 2-1/2 2-1/2cubes cubeschicken bouillon
- 2 tbsp oil 2 2tbsp tbspoil
- 1/2 chopped onion 1/2 1/2chopped onion
- 1-1/2 minced garlic clove 1-1/2 1-1/2minced garlic clovegarlic cloves
- 8 oz chunky salsa 8 8oz ozchunky salsa
- 1 28 oz can diced tomatoes 1 128 oz can 28 oz candiced tomatoes
- 1 10.75 oz can condensed tomato soup 1 110.75 oz can 10.75 oz cancondensed tomato soup
- 1-1/2 tbsp chili powder 1-1/2 1-1/2tbsp tbspchili powder
- 1 cup corn kernels 1 1cup cupcorn kernels
- 1 16 oz can chili beans 1 116 oz can 16 oz canchili beanbeans
Preparation
Step One: In large pot, saute onion and garlic in oil. Add water, chicken, salt, pepper, parsley, and bouillon cubes. Bring to a boil, then reduce and simmer until chicken is done. Remove chicken and shred. Step Two: Add remaining ingrediants to the broth. Simmer 30 minutes. Add shredded chicken and heat through. Step Three: Serve soup in bowls, garnish with shredded cheese, crushed nacho or corn chips, and sour cream.
