Ingredients

  • 1 lb lean ground beef 1 lb lean ground beef or lean ground chicken

  • 1 cup sliced mushrooms 1 cup sliced mushrooms
  • 3 celery stalks , chopped3 celery stalks, chopped
  • 1 cup grated marble cheese 1 cup grated marble cheese
  • 1/2 head lettuce 1/2 head lettuce
  • 1 tsp salt 1 tsp salt
  • 1/2 tsp pepper 1/2 tsp pepper
  • 2 tsp chili powder 2 tsp chili powder
  • 1/2 tsp garlic 1/2 tsp garlic
  • 1 can whole tomatoes , (blend in blender for a couple of seconds)1 can whole tomatoes, (blend in blender for a couple of seconds)
  • 1 can kidney beans 1 can kidney beans
  • 1 bag tortilla chips , (optional)1 bag tortilla chips, (optional)

Preparation

Brown meat and drain off any extra fat. Add all vegetables except for lettuce and cook for a few minutes. Add 1/2 of the spices except for chili powder and stir continue cooking on low heat. Add blended tomatoes, kidney beans and remainder of spices including chili powder. Let simmer for 10 to 15 minutes. Cut lettuce into bite size pieces. Place lettuce on individual serving dishes with a handful of grated cheese and then top with chili. Eat with tortilla chips for an extra filling meal.
