Chris's Best Lasagna

I have modified this lasagna recipe to suit me. I will make it ahead of time when we are having company, or taking it to friends. This gives me time to visit with family and friends instead of spending all my time in the kitchen. They always rave about this dish.

Ingredients

  • 1 lb hamburger meat, browned
  • 1 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 cup mushrooms, sliced
  • 28 oz diced tomatoes
  • 1 jar spaghetti sauce
  • 2 basil leaves, chopped
  • 4 cups mozzarella cheese, shredded, divided
  • 1 med onions, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 1 jalapeno pepper, minced
  • 1 box oven-ready lasagna noodles
  • 1 tablespoon olive oil, (optional)

Preparation

Brown hamburger in oil, ( I only use the oil if my hamburger is very lean)with onion and garlic, salt and pepper to taste. Add peppers and mushrooms cook for 5 min, or till peppers starting to soften. Add spagetti sauce, tomatoes and basil. Let simmer 15 min. While simmering, shred cheese. Using a 9x13 pan, ( my favourite is a clay pan) Layering sauce, noodles, sauce, noodles, cheese, noodles , sauce and cover with cheese. Cover with foil and bake 45min. (I will also make ahead, cook 30 min and freeze, cooking the thawed casserole for 45 min or till cheese is bubbly.) Serve with salad and bread.
