I make this this so often I think I could do it in my sleep, it really is so easy, yet such a hit. My grown children always request it when they come home.
Ingredients
- 1 cup water 1 1cup cupwater
- 1 cup tomato juice 1 1cup cuptomato juice or Clamato juice
- 2 tbsp dry beef soup base mix 2 2tbsp tbspdry beef soup base mix
- 1 tbsp Knorr oxtail soup mix 1 1tbsp tbspKnorr oxtail soup mix
- 1/2 onion , diced1/2 1/2oniononions, diced
- 1 roast of beef 1 1roast of beef or steak
- 1 tbsp flour 1 1tbsp tbspflour
Preparation
This recipe works nicely with any cut of roast beef, or a nice big marinating steak. If you cooking a steak decrease the time cooking to about 2 1/2 hours, an extra large roast may take a bit longer if you like it well done. In the roasting pan add one cup water, one cup tomato or clamato juice, two tablespoons of dry beef soup mix, one tablespoon Knorrs oxtail soup mix. One half onion diced. Stir well. add the meat. Cover. Cook at 325 degrees F. for about 3 hours or till tender. Remove the meat, the juice makes wonderful gravy. Mix a tablespoon of flour in one half cup cold water. Stir till there are no lumps. Combine juices with flour/water mixture in a saucepan and bring to slow boil stirring well till thickened. Add more water if needed. Salt & pepper to taste. Enjoy.
