Ingredients

  • 1 28 oz can plum tomatoes 1 28 oz can plum tomatoes
  • 1 14 oz can herb and garlic tomato paste 1 14 oz can herb and garlic tomato paste
  • 1 19 oz cab stewed tomatoes 1 19 oz cab stewed tomatoes
  • 1 cup dry red wine 1 cup dry red wine
  • 1/4 cup balsamic vinegar 1/4 cup balsamic vinegar
  • 3 cloves minced garlic 3 cloves minced garlic
  • 1 tsp dried basil 1 tsp dried basil
  • 1 tsp salt 1 tsp salt
  • 1/2 tsp pepper 1/2 tsp pepper
  • 1/4 tsp red pepper flakes 1/4 tsp red pepper flakes
  • 1 tsp dried parsley flakes 1 tsp dried parsley flakes
  • 1 pound lean ground beef 1 pound lean ground beef
  • 1/2 pound ground pork 1/2 pound ground pork
  • 2 cups cooked ziti 2 cups cooked ziti
  • 1 cup mascarpone cheese 1 cup mascarpone cheese
  • 1/2 cup grated Parmesan cheese 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil 1 tbsp olive oil

Preparation

Heat olive oil in large dutch oven, over medium heat. Add onion, red pepper celery carrot. Saute until softened, about 10 minutes. Add garlic, saute 2 minutes. Add meat, saute until no longer pink. Add wine and vinegar, simmer 5 minutes. Add tomatoes, and stewed tomatoes, tomato paste, and all spices. Bring to boil, then reduce heat and simmer, covered partially stirring often 20 minutes.

Meanwhile, bring large pot of salted water to boil and cook ziti al dente. Drain. Drizzle with one tsp. olive oil and toss to coat. Remove beef mixture from heat and stir in cheeses to coat. Toss in pasta and stir.
