This an great recipe for left over turkey meat and mashed potatoes with an exotic twist.
Ingredients
- 1 can coconut milk 1 1can cancoconut milk
- 1 can diced tomatoes 1 1can candiced tomatoes
- 1/2 red onion , diced1/2 1/2red oniononions, diced
- 1 clove garlic , minced1 1clove clovegarlic, minced
- 1 tsp grated ginger 1 1tsp tspgrated ginger
- 1 bay leaf 1 1bay leafbay leaves
- 1 tsp paprika 1 1tsp tsppaprika
- 1 tbsp curry powder 1 1tbsp tbspcurry powder
- 3 cups leftover turkey , diced3 3cups cupsleftover turkey, diced
- 4 cups mashed potatoes 4 4cups cupsmashed potatoes
- 1 tsp cumin seeds 1 1tsp tspcumin seeds
- 1 cup frozen peas 1 1cup cupfrozen peas
- 2 cups cauliflower , diced2 2cups cupscauliflower, diced
- 1 pinch salt , to taste1 1pinch pinchsalt, to taste
- 1 pinch pepper , to taste1 1pinch pinchpepper, to taste
- 1 tablespoon butter 1 1tablespoon tablespoonbutter
- 2 tablespoon canola oil 2 2tablespoon tablespooncanola oil
Preparation
over medium low heat add butter and canola oil in a heavy sauce pan. Add diced onions and sautee until onions are translucent. Add all spices, salt& pepper, garlic,can of diced tomotoes drained. Then add the coconut cream. Heat for about 5 minutes. Pour the sauce in a buttered 13inch x 9inch oven proof dish. Layer turkey meat, cauliflower, and peas. Mix cumin seeds with the mash potatoes Top the casserole with the mash potaoes. Bake at 400 degrees for 30 minutes or until golden.
