I have been making this lasagne receipe for over 30 years, and have been told by everyone who has eaten it. "Thats the best lasagne I've ever eaten". Use the best cheeses you can afford. This receipe can be baked in 2 smaller dishes - freeze one for later.

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp vegetable oil
  • 1 lb lean ground beef
  • 1/2 lb ground pork
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 1 can diced Italian tomatoes
  • 16 oz tomato sauce
  • 3 tbsp sugar
  • 1 tbsp salt
  • 1 tbsp fresh oregano
  • 1 tbsp fresh basil
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp pepper
  • 1/2 lb fresh lasagna noodles
  • 1 lb ricotta cheese
  • 1 lb mozzarella cheese, grated
  • 1/4 lb Parmesan cheese, grated

Preparation

Heat both oils in heavy saucepan. Add beef and pork; saute till brown. Add onions and garlic, saute for 3 mins. or more. Add tomatoes, tomato sauce,sugar,salt,oregano,basil,1/2 cup of parmesan cheese and pepper. Mix well and bring to a boil, reduce heat, simmer slowly for 2 hrs.,stirring occasionally. Fill a large pot with water and a tbsp. of salt -when it comes to a boil add lasagne noodles 2 at a time - boil each addition until cooked - rinse under hot water. In the bottom of a greased lasagne baking dish put a thin layer of sauce, then noodles, then a layer of cheeses. Repeat these layers twice, ending with a layer of sauce. Sprinkle with parmesan cheese. Bake at 350 degrees for 40 minutes - let stand for 15 minutess before serving.
