Easy Cabbage Roll Casserole

This is an easy recipe that allows you to enjoy the the taste of cabbage rolls without all of the work preparing them. This is a great recipe for potluck suppers

Ingredients

  • 1 can sauerkraut , drained1 can sauerkraut, drained
  • 1 lb ground beef 1 lb ground beef
  • 1 lb ground pork 1 lb ground pork
  • 2 medium onions , chopped2 medium onions, chopped
  • 2 cups mushrooms , chopped2 cups mushrooms, chopped
  • 1 clove garlic , minced1 clove garlic, minced
  • 1 cup parboiled rice , uncooked1 cup parboiled rice, uncooked
  • 2 tbsp paprika 2 tbsp paprika
  • 2 tsp salt 2 tsp salt
  • 28 oz crushed tomatoes 28 oz crushed tomatoes
  • 1 cup tomato juice 1 cup tomato juice
  • 1/2 cup fresh dill 1/2 cup fresh dill
  • 1 small cabbage 1 small cabbage
  • 1 dash pepper , to taste1 dash pepper, to taste

Preparation

1. Shred cabbage & mix with sauerkraut, then place half in the bottom of a deep 16-20 cup dish along with half of the sauerkraut. 2. In a large skillet, cook beef and pork, add onions, mushrooms, garlic, cook 3 minutes then stir in rice, paprika, salt & pepper. 3. Spread meat/rice mixture over top of cabbage mixture. Then top with remaining cabbage & sauerkraut. 4. Combine tomatoes, juice & dill. Pour over casserole. 5. Cover & cook at 350 for 2 to 2 1/2 hours.
