Easy Chicken Caprese

I wanted to make an entree based on Caprese salad ingredients: bocconcini cheese, tomatoes and fresh basil. This recipe turned out so easy and delicious, I put the dish together in 5 minutes, and then bake it for 40 minutes. It's easy to adjust the recipe for any number of servings and received rave reviews from my guests.

  • 6 6boneless chicken breastboneless chicken breasts
  • 4 oz 4ozbocconcini cheese or mozzarella cheese
  • 1/4 cup 1/4cupsun dried tomatoes
  • 6 leaves 6leavesfresh basil
  • 1/4 tsp 1/4tspsalt and pepper

Preheat oven to 350ºF. Rinse chicken breasts, then place in oiled baking dish. Make a pocket in chicken, by slicing 3/4 of the way down one side. Stuff pocket with a leaf of basil, (or 1/2 tsp dried basil), 1 tbsp sundried tomatoes, and slice of bocconcini. Bake for 40 minutes or until chicken is cooked through. Serve over rice or pasta. Enjoy!
