I wanted to have something to bring to parties that was delicious, easy to prepare, and could be made ahead of time and frozen. This recipe is wonderful, and can be used for both casual events and more formal gatherings. Offering a variety of dipping sauces can make these tidbits a special treat, or just serving them warm on their own with a hearty chili and crusty bread will please any guests you are entertaining.
Ingredients
- 1 lb frozen spinach , thawed (do not drain)1 1lb lbfrozen spinach, thawed (do not drain)

- 1/4 cup melted butter 1/4 1/4cup cupmelted butter
- 4 large eggs 4 4large largeeggeggs
- 1/2 tsp Dijon mustard 1/2 1/2tsp tspDijon mustard
- 1 cup Parmesan cheese , freshly shaved1 1cup cupParmesan cheese, freshly shaved
- 2 minced garlic cloves 2 2minced garlic clovegarlic cloves
- 1 tsp cayenne pepper 1 1tsp tspcayenne pepper
- 1/2 tsp ground thyme 1/2 1/2tsp tspground thyme
- 1-3/4 cup bread crumbs , plain1-3/4 1-3/4cup cupbread crumbs, plain
Preparation
Preheat your oven to 350°F. Place thawed spinach, onion, and butter in food processor and blend together. Add eggs and mustard and process thoroughly. In a separate bowl mix Parmesan, garlic, cayenne pepper, thyme and bread crumbs together. Add the food processor mixture to the bowl. Use your hands to combine everything completely, then form into small balls and place closely together on a baking sheet. Bake in the oven until firm when touched (about 20 minutes). Let cool for 5 minutes then transfer to a platter and serve, or let cool completely and freeze for up to 1 month. Makes approximately 48 golf ball sized tidbits, delicious when served warm with sour cream for dipping.
