Ingredients
- 1 lb extra lean ground beef 1 1lb lbextra lean ground beef
- 1-1/2 cup diced bell peppers 1-1/2 1-1/2cup cupdiced bell peppers
- 1 medium onion , chopped1 1medium oniononions, chopped
- 1 small can chilies 1 1small can small canchilichilies
- 1/3 cup jalapeño peppers 1/3 1/3cup cupjalapeño pepperjalapeño peppers
- 1 can refried beans 1 1can canrefried beanbeans
- 1 pkg tortilla wraps 1 1pkg pkgtortilla wraps
- 2 cups grated cheese 2 2cups cupsgrated cheese
- 1 cup enchilada sauce 1 1cup cupenchilada sauce
- 1 pkg taco seasoning 1 1pkg pkgtaco seasoning
- 1 tsp vanilla 1 1tsp tspvanilla
Preparation
Pre heat oven to 350. 1)Cook ground beef until browned, add vanilla and taco seasoning 2)Add all peppers and onion and let simmer for 5-7 min., stirring occasionally 3)Add refried beans, and cook until everything is well mixed, and consistency is a paste.(approx. 10 min. on medium heat) (while waiting for filling to cook, make enchilada sauce) 4)Spray 9 x 13 pan. 5)When enchilada sauce ready, put half into prepared pan 6)Take tortillas and put desired amount on filling to one side, wrap and set in sauce. Repeat until filling is gone. 7) Pour the rest of sauce on top and spread cheese evenly over top 8) Cook at 350 for 25 min.
