Enchilada Pie

Serve hot with diced lettuce, tomatoe, onion and sour cream if desired. Inspired by my mother who is now in a nursing home and cannot remember the recipe - she won an award years ago and was published in our local newspaper. I make this and take it to her and her ladies at her table once in awhile. She loves it - as does everyone who eats it.

Ingredients

  • 1 pound ground beef 1 pound ground beef
  • 1 small onion 1 small onion
  • 3 tbsp chili powder 3 tbsp chili powder
  • 1/2 tsp salt 1/2 tsp salt
  • 1 tsp pepper 1 tsp pepper
  • 2 pounds grated Cheddar cheese 2 pounds grated Cheddar cheese
  • 1 can large olives , sliced1 can large olives, sliced
  • 8 corn tortillas , buttered8 corn tortillas, buttered
  • 1/2 cup water 1/2 cup water
  • 1 15oz can tomato sauce 1 15oz can tomato sauce

Preparation

Fry burger and onion - drain, add chili powder, tomatoe sauce, salt and pepper to taste. Cook on medium/low until hot. Butter both sides of tortillas - layer 4 in a buttered 8X8" pan. Layer - meat sauce, then cheese, then olives; tortillas, meat sauce, cheese and olive. Pour 1/2 cup water over all, cover with foil and bake at 350 degrees for about 45 minutes. Uncover and bake until cheese is slightly browned. Serve with sour cream, diced lettuce, tomatoes and onions.
