This is without a doubt ,the best family favorite at our house. Comfort food extraordinaire! People of all ages, yes, the wee ones too, will ask for this recipe time and time again.
Ingredients
- 4 chicken breasts 4 4chicken breastchicken breasts
- 1 package uncooked tortillas , or ready made1 1package packageuncooked tortillatortillas, or ready made
- 1/2 cup finely chopped or pureed onions 1/2 1/2cup cupfinely chopped or pureed oniononions
- 3 cloves garlic 3 3cloves garlic
- 2 tbsp butter 2 2tbsp tbspbutter
- 3 tbsp flour 3 3tbsp tbspflour
- 8 oz light or regular sour cream 8 8oz ozlight or regular sour cream
- 2 cups low-sodium chicken broth 2 2cups cupslow-sodium chicken broth
- 2 oz chopped green chilies 2 2oz ozchopped green chiligreen chilies
- 1-1/2 cups shreeded Mexican style cheese 1-1/2 1-1/2cups cupsshreeded Mexican style cheese
Preparation
Poach/boil chicken until no longer pink. When cool, cut into bite size pieces, set aside. Saute onion, garlic in butter. Mix sour cream with flour, then add to onion mixture. Add the chicken broth and chilies and cook over medium heat until thick and bubbly. Remove from heat and add 3/4 cup cheese. Pour HALF of the cheese/onion mixture over the chicken and mix. Grease 11 x 7 pan. Divide the chicken mixture into the tortillas and roll up, seam side down. Pour remaining sauce over tortillas and sprinkle remaining cheese on top. Bake at 350 for 35 minutes. Please note that I cook the tortillas one at a time, according to package directions. I prefer the the taste and more authentic look.
