Exceptional Chicken Enchiladas

This is without a doubt ,the best family favorite at our house. Comfort food extraordinaire! People of all ages, yes, the wee ones too, will ask for this recipe time and time again.

  • 4 4chicken breastchicken breasts
  • 1 package 1packageuncooked tortillatortillas, or ready made
  • 1/2 cup 1/2cupfinely chopped or pureed oniononions
  • 3 3cloves garlic
  • 2 tbsp 2tbspbutter
  • 3 tbsp 3tbspflour
  • 8 oz 8ozlight or regular sour cream
  • 2 cups 2cupslow-sodium chicken broth
  • 2 oz 2ozchopped green chiligreen chilies
  • 1-1/2 cups 1-1/2cupsshreeded Mexican style cheese

Poach/boil chicken until no longer pink. When cool, cut into bite size pieces, set aside. Saute onion, garlic in butter. Mix sour cream with flour, then add to onion mixture. Add the chicken broth and chilies and cook over medium heat until thick and bubbly. Remove from heat and add 3/4 cup cheese. Pour HALF of the cheese/onion mixture over the chicken and mix. Grease 11 x 7 pan. Divide the chicken mixture into the tortillas and roll up, seam side down. Pour remaining sauce over tortillas and sprinkle remaining cheese on top. Bake at 350 for 35 minutes. Please note that I cook the tortillas one at a time, according to package directions. I prefer the the taste and more authentic look.
