Fast and Easy Breakfast Casserole

Ingredients
- 1/4 cup butter 1/4 1/4cup cupbutter
- 6 medium potatoes 6 6medium potatopotatoes
- 10 slices cooked bacon 10 10slices slicescooked bacon
- 1/2 cup shredded Cheddar cheese 1/2 1/2cup cupshredded Cheddar cheese
- 1/2 cup shredded mozzarella cheese 1/2 1/2cup cupshredded mozzarella cheese
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/4 tsp garlic powder 1/4 1/4tsp tspgarlic powder
- 1/4 cup mushrooms 1/4 1/4cup cupmushroommushrooms
- 1/4 cup onions 1/4 1/4cup cuponiononions
- 8 eggs 8 8eggeggs
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
Preparation
Preheat oven to 350 degrees.
Melt butter in large frying pan. Peel and slice potatoes, chop onions and slice mushrooms and fry in butter until golden brown.
Place potatoes, onions and mushrooms in greased 9x13 dish. Crumble cooked bacon over potatoes. Combine eggs, salt, pepper, garlic powder and cheeses in a medium bowl and stir under blended. Pour over bacon and potatoes. Bake 25-30 minutes, or until set.
