This is a very tasty side dish of rice and vegetables to accompany any meat dish or fish. This casserole has a nice texture with the rice, slightly crunchy vegetables and cashews.
Ingredients
- 2 tbsp butter , melted2 2tbsp tbspbutter, melted
- 1-1/2 cups uncooked brown rice 1-1/2 1-1/2cups cupsuncooked brown rice
- 2 large onions , chopped2 2large oniononions, chopped
- 3 cups chicken broth 3 3cups cups chicken broth
- 3 tbsp soy sauce 3 3tbsp tbspsoy sauce
- 1/2 tsp thyme 1/2 1/2tsp tspthyme
- 1 tsp salt 1 1tsp tspsalt
- 3 tbsp oil 3 3tbsp tbspoil
- 2 cloves garlic 2 2cloves garlic
- 1 bunch broccoli , cut in bite-size pieces1 1bunch broccoli, cut in bite-size pieces
- 1 head cauliflower , cut in bite-size pieces1 1head cauliflower, cut in bite-size pieces
- 1 red pepper , cut in strips1 1red pepper, cut in strips
- 1 green pepper , cut into strips1 1green pepper, cut into strips
- 1 cup cashews 1 1cup cupcashewcashews
- 2 cups shredded Cheddar cheese 2 2cups cupsshredded Cheddar cheese
Preparation
In a large 2 quart casserole, mix butter, rice, half of the chopped onion, broth and soy sauce. Cover and bake at 350 degrees for 1 1/2 hours. Remove from oven, stir in thyme and salt. Heat oil in skillet and saute remaining onion and vegetables for 10 mins. over high heat. Pour over rice mixture. Cover and bake 10 mins. Remove lid and sprinkle with cashews. Mound cheddar cheese around the edges and bake for another 5 mins. or until cheese is melted.
