It may sound like a dessert BUT is like a quiche.
Ingredients
- 1 bunch asparagus , or 1-2 cans of asparagus (drained)1 1bunch bunchasparagus, or 1-2 cans of asparagus (drained)
- 6 eggs 6 6eggeggs
- 1/4 cup melted margarine 1/4 1/4cup cupmelted margarine
- 3 cups cottage cheese 3 3cups cupscottage cheese
- 2 cups grated Cheddar cheese 2 2cups cupsgrated Cheddar cheese
- 1/4 cup Parmesan cheese 1/4 1/4cup cupParmesan cheese
- 1/4 cup fresh dill , or flakes1/4 1/4cup cupfresh dill, or flakes
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 3 green onions , chopped3 3green oniononions, chopped
- 1 tbsp salt 1 1tbsp tbspsalt
- 1/2 cup flour 1/2 1/2cup cupflour
Preparation
Cook asparagus (broccoli can be substituted) in boiling water for 3 minutes and drain OR drain the canned asparagus. Combine eggs with flour, melted margerine or butter, cottage cheese, cheddar and parmesan cheese. Stir in asparagus or broccoli, dill, onions, salt and pepper. Pour mixture into a buttered 9 X 13 inch pan, Bake at 350 degrees F for 50-60 minutes.
*** I have also put the asparagus on the bottom of the buttered pan and put the rest of the ingredients on TOP. I like this way better!!
