I LOVE tomatoes paired with Feta! Yum!!

Ingredients

  • 1 small onion 1 small onion
  • 1 large tomato 1 large tomato
  • 8 slices dark rye bread 8 slices dark rye bread
  • 2 tbsp margarine 2 tbsp margarine
  • 1 pinch basil 1 pinch basil
  • 1 sprinkle salt 1 sprinkle salt
  • 1 sprinkle pepper 1 sprinkle pepper
  • 2 pinches garlic 2 pinches garlic

Preparation

Spread margarine on rye slices-place buttered side down in fry pan on medium heat. Place sliced tomato and onion on top, sprinkle with garlic, basil, salt and pepper, and sliced or crumbled feta. Top with other slice of rye(buttered side up). Cook till toasted, flip and cook other side. Serve with dill pickles, salad, or all alone:)
