Rub with herbs and then roast to perfection. You an get it oven ready the night before to save time.
Ingredients
- 2 tsp dried thyme 2 2tsp tspdried thyme
- 1 tsp fennel seeds 1 1tsp tspfennel seeds
- 1 tsp dried tarragon 1 1tsp tspdried tarragon
- 1 tsp dried marjoram 1 1tsp tspdried marjoram
- 1 tsp minced garlic 1 1tsp tspminced garlic
- 1 tsp salt 1 1tsp tspsalt
- 1 tsp cracked pepper 1 1tsp tspcracked pepper
- 1/4 tsp crushed dried rosemary 1/4 1/4tsp tspcrushed dried rosemary
- 2 tbsp olive oil 2 2tbsp tbspolive oil
- 5 lb pork loin roast 5 5lb lbpork loin roast
Preparation
In small bowl, combine thyme, fennel, tarragon, marjoram, garlic, salt, pepper, rosemary and oil. Rub pork with mixture; if desired, refrigerate six hours to overnight. When ready to roast, preheat oven to 450*F. Place pork in a shallow roasting pan; roast 15 minutes. Reduce oven temperature to 350*F; cook pork until internal temperature reaches 155*F, about 1 hour and 20 minutes. Let stand 15 minutes before slicing.
