Herbed Pork Roast

Rub with herbs and then roast to perfection. You an get it oven ready the night before to save time.

Ingredients

  • 2 tsp dried thyme
  • 1 tsp fennel seeds
  • 1 tsp dried tarragon
  • 1 tsp dried marjoram
  • 1 tsp minced garlic
  • 1 tsp salt
  • 1 tsp cracked pepper
  • 1/4 tsp crushed dried rosemary
  • 2 tbsp olive oil
  • 5 lb pork loin roast

Preparation

In small bowl, combine thyme, fennel, tarragon, marjoram, garlic, salt, pepper, rosemary and oil. Rub pork with mixture; if desired, refrigerate six hours to overnight. When ready to roast, preheat oven to 450*F. Place pork in a shallow roasting pan; roast 15 minutes. Reduce oven temperature to 350*F; cook pork until internal temperature reaches 155*F, about 1 hour and 20 minutes. Let stand 15 minutes before slicing.
