The yummiest way to eat potatoes. Good as a meal or a side dish.
Ingredients
- 6 potatoes 6 6potatopotatoes
- 1 cup sour cream 1 1cup cupsour cream
- 2 tbsp flour 2 2tbsp tbspflour
- 1/3 cup butter , melted1/3 1/3cup cupbutter, melted
- 1 tsp salt 1 1tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 4 hardboiled eggs , sliced thinly4 4hardboiled eggeggs, sliced thinly
- 1/4 cup butter 1/4 1/4cup cupbutter
- 1 cup fresh bread crumbs 1 1cup cupfresh bread crumbs
- 1/4 tsp paprika 1/4 1/4tsp tsppaprika
Preparation
Slice the potatoes in half and boil in water until almost cooked; they should still be a bit firm.Cool, then cut into slices about 1/2 an inch thick. Mix the sour cream , 1/3 cup of butter, and 2 tablespoons of flour in a bowl. Butter and crumb the inside of a large casserole dish. Spread out potato slices to make one layer in the bottom of the casserole,cover with half the sliced eggs, sprinkle with salt and pepper. Cover with half of the sour cream mixture.Add another layer of potatoes, eggs, and salt and pepper. Put on remaining sour cream mixture, and cover with remaining potatoes, and salt and pepper. in a frying pan , over medium heat, melt 1/4 cup of butter. Add breadcumbs and saute until they are just turning golden. cover the potatoes with the buttered crumbs, and sprinkle with paprika. Bake in 350 oven, uncovered, for 35 minutes.
