Ingredients
- 1 cup chopped leftover turkey 1 1cup cupchopped leftover turkey
- 2 tbsp oil 2 2tbsp tbspoil
- 1 medium onion , chopped1 1medium oniononions, chopped
- 1 clove garlic , chopped1 1clove garliccloves of garlic, chopped
- 1 tsp dried oregano 1 1tsp tspdried oregano
- 1 tsp dried basil 1 1tsp tspdried basil
- 1 tsp dried red pepper flakes 1 1tsp tspdried red pepper flakes
- 1 celery stalk , finely chopped1 1celery stalkcelery stalks, finely chopped
- 1 8 oz can tomatoes 1 18 oz can 8 oz cantomatoes
- 1 16 oz can tomatoes 1 116 oz can 16 oz can tomatoes
- 1/2 cup water 1/2 1/2cup cupwater
- 3 cups cooked rice , long grain3 3cups cupscooked rice, long grain
- 1 cup cottage cheese 1 1cup cupcottage cheese
- 2 cups grated mozzarella cheese 2 2cups cupsgrated mozzarella cheese
- 1/3 cup Parmesan cheese 1/3 1/3cup cupParmesan cheese
Preparation
Heat oil over med heat and cook onion and garlic until tender but not browned. Add the oregano, basil, red pepper flakes(or use chopped red pepper if you don't have)celery, tomatoes, tomato sauce and water. Bring to boil and simmer for 25 minutes. Mix rice, cottage cheese and egg and spoon half the mixture over the bottom of a prepared(buttered or no stick spray)long lasagna style baking pan. Sprinkle one cup chopped leftover turkey over rice cottage cheese layer. Pour over half the tomato sauce and sprinkle with half of the mozzarella. Repeat with the remainder of the rice,turkey,sauce, and mozzarella. Sprinkle with parmesan and bake in a 350F oven for 35 minutes.(Can be frozen)
