Leftover Turkey Rice Casserole

Ingredients

  • 1 cup chopped leftover turkey
  • 2 tbsp oil
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried red pepper flakes
  • 1 celery stalk, finely chopped
  • 1 8 oz can tomatoes
  • 1 16 oz can   tomatoes
  • 1/2 cup water
  • 3 cups cooked rice, long grain
  • 1 cup cottage cheese
  • 2 cups grated mozzarella cheese
  • 1/3 cup Parmesan cheese

Preparation

Heat oil over med heat and cook onion and garlic until tender but not browned. Add the oregano, basil, red pepper flakes(or use chopped red pepper if you don't have)celery, tomatoes, tomato sauce and water. Bring to boil and simmer for 25 minutes. Mix rice, cottage cheese and egg and spoon half the mixture over the bottom of a prepared(buttered or no stick spray)long lasagna style baking pan. Sprinkle one cup chopped leftover turkey over rice cottage cheese layer. Pour over half the tomato sauce and sprinkle with half of the mozzarella. Repeat with the remainder of the rice,turkey,sauce, and mozzarella. Sprinkle with parmesan and bake in a 350F oven for 35 minutes.(Can be frozen)
