Macaroni and Beef Casserole

Ingredients

  • 500 g lean ground beef 500 g lean ground beef
  • 500 g macaroni , uncooked500 g macaroni, uncooked
  • 1 can diced tomatoes 1 can diced tomatoes
  • 1 jar pasta sauce 1 jar pasta sauce
  • 2 cups shredded mozzarella cheese 2 cups shredded mozzarella cheese
  • 1/2 cups grated Parmesan cheese 1/2 cups grated Parmesan cheese
  • 2 medium onions , diced2 medium onions, diced
  • 2 red peppers , diced2 red peppers, diced
  • 2 medium carrots , shredded2 medium carrots, shredded
  • 1 tsp basil 1 tsp basil
  • 1 tsp garlic powder 1 tsp garlic powder
  • 1 tsp parsley flakes 1 tsp parsley flakes

Preparation

In skillet, brown ground beef until no longer pink; drain. Add onions, cook until tender. Add peppers, carrots, spices and cook until vegetables become slightly tender. Drain diced tomatoes and add to beef mixture. Add tomatoe sauce and simmer about 10 minutes. Meanwhile, bring large pot of water to boil. Cook pasta until al dente; drain. In oven-proof casserole dish, mix pasta with meat sauce mixture. Blend in cheeses, reserving some to sprinkle on top. Cover with tin foil and bake in 350' oven for 45 minutes; remove foil and bake 15 more minutes.
