Mandarin Salad
Ingredients
- 1/4 cup sliced almonds 1/4 1/4cup cupsliced almondalmonds
- 4 tsp sugar 4 4tsp tspsugar
- as needed romaine lettuce , bite-size piecesas needed as neededromaine lettuce, bite-size pieces

- 2 stalks celery , chopped2 2stalks stalkscelery, chopped
- 2 green onions , with tops, thinly sliced2 2green oniongreen onions, with tops, thinly sliced
- 11 oz can mandarin oranges 11 11oz can oz canmandarin orangemandarin oranges
- 1/4 cup vegetable oil 1/4 1/4cup cupvegetable oil
- 2 tbsp sugar 2 2tbsp tbspsugar
- 2 tbsp vinegar 2 2tbsp tbspvinegar
- 1 tbsp parsley , finely chopped1 1tbsp tbspparsley, finely chopped
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1 dash pepper 1 1dash dashpepper
- 1 dash red pepper , sauce1 1dash dashred pepper, sauce
Preparation
In non-stick skillet, cook almonds and 4 tsp sugar over low heat, stirring constantly until sugar is melted and almonds are coated. Cool and break apart and store at room temperature. To make sweet and sour dressing shake the last 7 ingredients together in a tightly covered jar and refrigerate. When salad needed, place lettuce, celery, and onions in a bag or large bowl and add sweet and sour dressing, mix together. Add orange segments, mix. Add almonds, mix.
