I like this recipe because it's easy and I always have the seasonings. Easy and delicious
Ingredients
- 2 tablespoons vinegar 2 2tablespoons tablespoonsvinegar
- 2 tablespoons olive oil , or salad oil2 2tablespoons tablespoonsolive oil, or salad oil
- 1/2 tsp sugar , or pinch or two of sweetener1/2 1/2tsp tspsugar, or pinch or two of sweetener
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/4 tsp celery seeds 1/4 1/4tsp tspcelery seeds
- 1 large cucumber , peeled, halved lengthwise, and thinly sliced1 1large cucumbercucumbers, peeled, halved lengthwise, and thinly sliced
- 1 small onion , thinly sliced1 1small onion, thinly sliced
Preparation
For marinade,use an appropriate size container like a lock & lock, combine vinegar,oil,sugar,salt, and celery seeds. Add cucumber and onion;close container and gently turn to toss and coat. Chill at least 4 hrs. Best used within 48 hrs. Turn occasionally. You can also add 1 cup approx of halved cherry tomatoes, and 1 medium green,red,or yellow pepper,cut into thin strips.
