Marinated Cucumbers

I like this recipe because it's easy and I always have the seasonings. Easy and delicious

Ingredients

  • 2 tablespoons vinegar
  • 2 tablespoons olive oil, or salad oil
  • 1/2 tsp sugar, or pinch or two of sweetener
  • 1/2 tsp salt
  • 1/4 tsp celery seeds
  • 1 large cucumber, peeled, halved lengthwise, and thinly sliced
  • 1 small onion, thinly sliced

Preparation

For marinade,use an appropriate size container like a lock & lock, combine vinegar,oil,sugar,salt, and celery seeds. Add cucumber and onion;close container and gently turn to toss and coat. Chill at least 4 hrs. Best used within 48 hrs. Turn occasionally. You can also add 1 cup approx of halved cherry tomatoes, and 1 medium green,red,or yellow pepper,cut into thin strips.
