Mexican Beef Pie
This recipe makes 6 servings

Ingredients
- 1 lb lean ground beef
- 3 cloves of garlic
- 1 onion, chopped
- 2 tsp chili powder
- 1 tsp ground mustard
- 1/4 tsp cumin
- 1/4 tsp hot pepper flakes
- 1/4 tsp oregano
- 1/4 tsp salt
- 1 14 oz can stewed tomatoes
- 1/2 sweet green pepper, diced
- 1 14 oz can kidney beans
- 3/4 cup cornmeal
- 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 cup shredded Cheddar cheese
- 3/4 cup buttermilk or Yogurt
- 1 egg
- 1 tbsp oil
Preparation
Stir in tomatoes, breaking them with a spoon.
Cook uncovered for 20min, stirring occasionally. Stir in green pepper.
Add beans. Heat through. Place into 2L casserole dish.
Combine cornmeal, flour, baking soda, salt and sugar. Stir in cheese.
Mix buttermilk, egg and oil in a separate bowl. Add to dry ingredients.
Stir just enough to combine.
Spread cornmeal mixture over top of beef/bean mixture.
Bake at 450 F for 20 min or until topping is set and lightly browned.
Serve with sour cream on side.
