Mom's Monday Macaroni

This is the easiest thing to put together and always leaves you satisfied. Variation possibilities abound, so my family never tires of it. The traditional remains their favourite.

Ingredients

  • 1 can diced tomatoes , broken up further if desired1 can diced tomatoes, broken up further if desired
  • 500 mL dry (uncooked) elbow macaroni , whole wheat or white500 mL dry (uncooked) elbow macaroni, whole wheat or white
  • 200 mL water 200 mL water
  • 125 mL salsa 125 mL salsa
  • 325 mL sharp Cheddar cheese , diced small325 mL sharp cheddar cheese, diced small
  • 1 pinch salt , to taste1 pinch salt, to taste
  • 1 pinch pepper 1 pinch pepper
  • 1 dash tabasco sauce 1 dash tabasco sauce
  • 35 buttered, crushed soda crackers 35 buttered, crushed soda crackers

Preparation

Pre heat oven to 350 degrees. Add all ingredients except for buttered cracker crumbs into a medium casserole dish and mix until blended. Cover and bake for 35 minutes. Remove from oven, stir gently and then sprinkle crushed cracker crumbs on top. Continue to bake for 10-15 minutes until crumbs are golden brown. Serve with warm crusty bread and a crisp green salad. Note: this can be pre assembled in the morning and left in a timed-oven to be steaming hot when you walk in the door. It does not go soggy. Variations: -mix cheddar cheese with gruyere or jack -add 250 ml of canned black beans, rinsed -added par-boiled broccoli florets -substitute whole wheat pasta -substitute the type of pasta -add asparagus tips and 125 ml extra water -mix grated parmesan in with cracker crumb.
