Mom's Nanaimo Bars

Nanaimo bars are a well kept secret from Vancouver Island. They are delicious 3 layer bars. There's no cooking besides melting the choclolate.

Preparation time: 1 hour.

Ingredients

    2 cups graham cracker crumbs
    1 cup coconuts
    1/2 cup chopped nuts
    1/2 cup butter
    1/4 cup sugar
    5 tbsp cocoa powder
    1 tsp vanilla
    1 egg
    6 squares semisweet chocolate
    1 tbsp butter

Preparation:

BOTTOM LAYER ½ cup softened butter ¼ cup sugar 5 tablespoons cocoa 1 teaspoon vanilla 1 egg Put all ingredients a double boiler (or in a bowl set in a pot of shallow boiling water). Stir well until the butter melts and the mixture has a custard-like consistency. 2 cups graham crumbs 1 cup coconut ½ cup chopped nuts (I use almonds, you can use walnuts or pecans if you prefer) Combine ingredients and add to the above mixture. Pack evenly into a 9x9 pan. (for deep dish, use a smaller pan) MIDDLE LAYER ¼ cup softened butter 3 tablespoons milk 3 tablespoons vanilla custard powder 2 cups icing sugar Mix the butter, milk and custard powder. Blend in the icing sugar in small batches. Spread this on top of the bottom layer. TOP LAYER 6 squares of semi-sweet chocolate 1 tablespoon butter Melt in a double boiler (or in a bowl set in a pot of shallow boiling water). Spread this over the middle layer. Refrigerate for an hour, slice it up and put it back into the fridge. Its easier to slice it before it gets to fridge temperature.
