Ingredients

  • 2 tsp ground coriander 2 tsp ground coriander

  • 1 tsp ground nutmeg 1 tsp ground nutmeg
  • 1 tsp ground cloves 1 tsp ground cloves
  • 1 tsp ground cinnamon 1 tsp ground cinnamon
  • 3 lb lamb cubes , 1/4 in from the shoulder preferably3 lb lamb cubes, 1/4 in from the shoulder preferably
  • 1/2 cup olive oil 1/2 cup olive oil
  • 2 onions , chopped2 onions, chopped
  • 5 garlic cloves , minced5 garlic cloves, minced
  • 28 oz canned tomatoes 28 oz canned tomatoes
  • 1 cup raisins , soaked in sherry or water1 cup raisins, soaked in sherry or water
  • 1 tbsp Morrocan spices , (first 7 ingredients)1 tbsp Morrocan spices, (first 7 ingredients)

  • 1 tsp tumeric 1 tsp tumeric
  • 1/2 tsp red pepper flakes , to taste1/2 tsp red pepper flakes, to taste
  • 1 cup whole almonds 1 cup whole almonds

Preparation

Prepare Morrocan spices by mixing all on the 7 first ingredients. Brown lamb cubes (in batches)and set aside. Add onions to oil and saute until softened. Add garlic and saute for 1 minute. Return meat to pan and add other ingerdients, except nuts, to onion mixture and simmer, covered, for 1-1/2 hour or until meat is tender. Add nuts before serving. Serve with plain rice or couscous.
