Serve with a fresh baguette. These mussels taste great - like you're in an Italian Bistro.

Ingredients

  • 1 bag 2 lbs fresh mussels , cleaned1 bag 2 lbs fresh mussels, cleaned
  • 5 cloves garlic , Minced5 cloves garlic, Minced
  • 2 tbs olive oil 2 tbs olive oil
  • 1 Cup white wine 1 Cup white wine
  • 2 tbsp butter 2 tbsp butter
  • 4 green onions , chopped4 green onions, chopped
  • 1/2 bunch parsley , chopped1/2 bunch parsley, chopped
  • 4 Roma tomatoes , chopped4 Roma tomatoes, chopped

Preparation

1. Clean mussels remove any hair, soak in a bowl to remove dirt and sand 2. Heat Olive Oil in a large pot over Medium heat. Add garlic cook for one minute. Add onion and tomato cook until almost soft. Add white wine, parsley and butter. Bring to a boil, boil until the liquid has reduced by half - approx 15 min 3. Add the mussels, cover and cook for 15 min. discard any that don't open.
