Party Pork Chops

Ingredients

  • 4 pork chops 4 pork chops
  • 5 cups water , (Brine)5 cups water, (Brine)
  • 1/4 cup kosher salt , (Brine)1/4 cup kosher salt, (Brine)
  • 1/4 cup sugar , (Brine)1/4 cup sugar, (Brine)
  • 1 tsp dried thyme leaves , crumbled1 tsp dried thyme leaves, crumbled
  • 1 tsp dried rosemary , crushed1 tsp dried rosemary, crushed
  • 2 cloves garlic , pressed2 cloves garlic, pressed
  • 2 tbsp balsamic vinegar 2 tbsp balsamic vinegar
  • 2 tbsp olive oil 2 tbsp olive oil

Preparation

Rinse the pork chops with water and pat them dry with paper towels. In a large bowl, whisk together the brine until the sugar and salt are dissolved. Place the pork chops in the brine, cover and brine overnight in the refrigerator. Drain the brine. Rinse chops in cold water and let stand in cold water 10 min. Pat dry. Whisk together the marinade ingred. Place pork chops in the marinade and allow them to marinate for 1 hr. Preheat the oven to 375°F. On the stove, heat a large saute pan over med. high heat. then pour in 2 tbsp. oil and let it heat until it shimmer. Sear the chops for about 2 min on each side, until well caramelized. Place in oven and roast the chops until an internal temperature of 145°F is reached.
