Party Pork Chops
Ingredients

- 1/4 cup kosher salt , (Brine)1/4 1/4cup cupkosher salt, (Brine)
- 1/4 cup sugar , (Brine)1/4 1/4cup cupsugar, (Brine)
- 1 tsp dried thyme leaves , crumbled1 1tsp tspdried thyme leafdried thyme leaves, crumbled
- 1 tsp dried rosemary , crushed1 1tsp tspdried rosemary, crushed
- 2 cloves garlic , pressed2 2cloves garlic, pressed
- 2 tbsp balsamic vinegar 2 2tbsp tbspbalsamic vinegar
- 2 tbsp olive oil 2 2tbsp tbspolive oil
Preparation
Rinse the pork chops with water and pat them dry with paper towels. In a large bowl, whisk together the brine until the sugar and salt are dissolved. Place the pork chops in the brine, cover and brine overnight in the refrigerator. Drain the brine. Rinse chops in cold water and let stand in cold water 10 min. Pat dry. Whisk together the marinade ingred. Place pork chops in the marinade and allow them to marinate for 1 hr. Preheat the oven to 375°F. On the stove, heat a large saute pan over med. high heat. then pour in 2 tbsp. oil and let it heat until it shimmer. Sear the chops for about 2 min on each side, until well caramelized. Place in oven and roast the chops until an internal temperature of 145°F is reached.
