Pesto Artichoke Pizza

Ingredients

  • 70 g 70gartichokes
  • 1/2 1/2medium tomatotomatoes
  • 2 tbsp 2tbsponion, finely chopped
  • 2 tbsp 2tbspparsley
  • 1 slice 1slicemountain bread rye wraps
  • 1 tbsp 1tbsppesto
  • 85 g 85glow fat mozzarella cheese

Preparation

Preheat oven to 450F 1. Slice tomato and lay on paper towel. 2. Heat heavy based fry pan on high. Saute, artichokes, onion and parsley. Remove from heat. 3. Lay Mountain Bread slice on a lightly oiled tray and bake for 3 min. 4. Remove bread and spread with pesto, cheese and veggies. Lay tomatoes on top. 5. Return to oven for 10-15 mins. 6. Serve Immediately.
