Pork Tenderloin with Orange Sauce

Ingredients
- pork tenderloin 2-3/4 lb 2-3/4 lbpork tenderloin
- 1/2 cup sliced green onion 1/2 1/2cup cupsliced green onion
- 1 tsp grated orange rind 1 1tsp tspgrated orange rind
- 1 tsp sugar 1 1tsp tspsugar
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1 dash cayenne pepper 1 1dash dashcayenne pepper
- 1/2 cup orange juice 1/2 1/2cup cuporange juice
- 1 tbsp all purpose flour 1 1tbsp tbspall purpose flour
- 2 tbsp water 2 2tbsp tbspwater
- 1 medium orange , peeled and cut in half crosswise and thinly sliced1 1medium orangeoranges, peeled and cut in half crosswise and thinly sliced
- 3 cups hot cooked rice 3 3cups cupshot cooked rice
- 2 tbsp brandy , (optional)2 2tbsp tbspbrandy, (optional)
Preparation
Combine onions, peel, sugar, salt, cayenne, orange juice and brandy in a small bowl and set aside. In a 10 inch square casserole place tenderloins side by side. Tie with string at 1 1/2 inch intervals. Pour juice mixture over meat. Cover and microwave on medium high for 20 to 27 minutes or until meat is no longer pink and internal temperature registers 165 degrees Farenheit in several places. Turn pork over several times. Tenderloin can also be cooked in conventional oven. Remove pork from casserole. Wrap in foil. Set aside. In a mixing bowl blend flour and water until smooth. May need to add more flour. Cut orange slices into quarters. Add flour mixture and orange pieces to liquid in casserole. Microwave on high two to four minutes or until mixture thickens and bubbles stirring once. Slice pork and serve with rice. Spoon sauce over the top. Makes 6 servings.
