Great for breakfast, lunch or dinner, this easy and inexpensive dish is a family favorite.
Ingredients
- 9 whole medium potatoes , peeled9 9whole medium potatopotatoes, peeled
- 6 hard boiled eggs , sliced6 6hard boiled eggeggs, sliced
- 12 slices bacon , cut into 212 12slices bacon, cut into 2
- 1 tsp salt 1 1tsp tspsalt
Preparation
Preheat oven to 400 F. Cook the peeled whole potatoes in salted water until almost done. Drain and run under cold water for a few minutes. Slice the potatoes into thick slices. Layer 1/3 of the potatoes in the bottom of a casserole dish with a lid. Layer half of the egg slices over the potatoes, then layer 1/3 of the bacon pieces. Repeat the layer. The final layer will be the remaining 1/3 potatoes with the remaining bacon pieces. Place in hot oven covered and cook for approximately 50 minutes and cook. Remove the lid for the final 10 minutes, and cook until the bacon is crispy. Dish can be served with sour cream on the side and a crisp green salad. Note: You can add more bacon pieces if you like.
