This is a recipe from my friend, Rick, who called it Potatoes Schwartzee, who probably got it from someone else. Whatever you call it, this is fabulous comfort food!
Ingredients
- 2 lb square cut hash browns 2 2lb lbsquare cut hash browns
- 500 ml sour cream 500 500ml mlsour cream
- 2 10 oz cans cream of mushroom soup 2 210 oz 10 ozcans cream of mushroom soup
- 1/2 cup melted butter 1/2 1/2cup cupmelted butter
- 1 small onion , chopped finely1 1small onion, chopped finely
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 1/2 cup grated Parmesan cheese 1/2 1/2cup cupgrated Parmesan cheese
- 2 cups grated Cheddar cheese 2 2cups cupsgrated Cheddar cheese
Preparation
In large bowl, combine all ingredients, except cheeses. (Using your hands is the easiest method, although you may wish to let the frozen hashbrowns sit at room temperature for a 1/2 hour or so).
Scrape into a greased casserole large enough to hold mixture. Sprinkle cheeses over top and bake at 350 degrees for 1 1/2 hours or until cheese is bubbly and slightly browned and knife is warm when inserted in centre.
