9 inch square baking pan, lined with foil, lightly greased.

Ingredients

  • 3/4 cup soy flour
  • 1/2 cup brown sugar
  • 1-1/2 tsp xanthan gum
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp grated orange peel
  • 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs
  • 1/2 cup pumpkin purée
  • 2 tbsp vegetable oil
  • 3/4 cup pitted dates, chopped
  • 1/2 cup walnuts

Preparation

1. In large bowl, combine soy flour, brown sugar, xanthan gum, baking powder, salt, orange zest, cinnamon and nutmeg. Set aside. 2. In another large bowl, beat eggs, pumpkin, oil until combined. Slowly beat in dry ingredients and mix until just combined. Stir in dates and walnuts. Spoon into prepared pan. Using moistened spatula, smooth top. Let stand for 30 minutes. Meanwhile, preheat oven to 325. 3. Bake 25-30 minutes, or until tests clean. Let cool completely in pan on a rack. Cut into small bars.
