Raclette and Ham Panini

This is an easy but delicious sandwich to serve for lunch. The raclette cheese is a firm cheese that has a rich complex flavour. The panini press makes the bread toasty and the cheese melting so that you get a big crunch when you bite into the sandwich and then the Raclette cheese oozes out into your mouth. I was inspired to make this sandwich, because I wanted to eat a swiss cheese and ham sandwich, but I didn't have any swiss cheese. So, I went to a farmer's market and the owner of a stall made this raclette cheese which looked beautifully round, and he told me to try it instead of swiss cheese for more flavour. I did, and I prefer this cheese over the swiss. Easy to make and a joy to serve.

Servings: 2

Ingredients:

    4 slices raclette cheese (~1/8 in. thick)
    4 thinly sliced fresh bread (1/4-1/2 in. thick)
    4 tsp. grainy mustard
    2 slices country ham (1/4 in. thick)

Preparation:

1. Spread about 1 tsp. of grainy mustard on the 4 slices of bread. 2. Place 2 slices of Raclette cheese on 2 slices of bread. On top of the cheese, place 1 slice of the country ham. 3. Place the 2 slices of bread on top the ham. 4. Place the sandwiches on top of the panini grill and press the cover to close. Grill on medium high for about 1 and a half to 2 minutes or until the bread becomes crispy and the cheese has melted. Each panini press has different temperature settings, so turn it to a lower temperature if it burns the bread. If you don't have a panini press, you could also pan fry the sandwiches. Just butter both sides of the bread on the outside and heat on medium gently on both sides until crispy and brown. 5. Serve immediately and bon appetite!
