Raclette and Ham Panini

This is an easy but delicious sandwich to serve for lunch. The raclette cheese is a firm cheese that has a rich complex flavour. The panini press makes the bread toasty and the cheese melting so that you get a big crunch when you bite into the sandwich and then the Raclette cheese oozes out into your mouth. I was inspired to make this sandwich, because I wanted to eat a swiss cheese and ham sandwich, but I didn't have any swiss cheese. So, I went to a farmer's market and the owner of a stall made this raclette cheese which looked beautifully round, and he told me to try it instead of swiss cheese for more flavour. I did, and I prefer this cheese over the swiss. Easy to make and a joy to serve.

Ingredients:

4 slices raclette cheese (~1/8 in. thick)
4 thinly sliced fresh bread (1/4-1/2 in. thick)
4 tsp. grainy mustard
2 slices country ham (1/4 in. thick)
