A friend of my mother's gave me this recipe years ago and it is the only lasagna I make because it so good. She was an excellent Italian cook and recently passed away. I thank her for her recipe and hope others will enjoy it as much as I do.

Ingredients

  • 1-1/2 lb pork sausage meat
  • 1 tsp dried Italian seasoning
  • 1 clove garlic
  • 1 tbsp basil
  • 1/2 tsp salt
  • 1 can (19 oz) canned plum tomatoes
  • 2 cans (5-1/2 oz) tomato paste
  • 3 cups cottage cheese
  • 1/2 cup grated fresh Parmesan cheese
  • 2 tbsp dried parsley
  • 2 beaten eggs
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 lb mozzarella cheese, sliced
  • 12 regular lasagna noodles
  • 1/4 cup grated parmesan cheese

Preparation

Lay lasagna noodles in 9X13 pan and cover with hot tap water to soak. Brown sausage meat slowly, add garlic, basil, salt and italian seasoning. Spoon off fat and add plum tomatos and tomato paste. Simmer 30 minutes. In bowl, combine cottage cheese, parmesan, parsley, eggs, salt and pepper. Remove noodles from water and dry dish. Oil the dish with olive oil and lay one layer of noodles, 1/2 of cottage cheese mixture, layer of mozzarella and layer of meat sauce. Repeat all layers and top with extra parmesan cheese. Bake at 375 degrees for 45 minutes. Let stand for 15 minutes before slicing.
