Revitalizing Lentil casserole

This hardy casserole will fill you up, give you energy for those chilly days in autumn.

Ingredients

  • 1 can lentils , (any colour)1 can lentils, (any colour)
  • 3 onions 3 onions
  • 1 cup white cheddar cheese 1 cup white cheddar cheese
  • 1/2 cup bread crumbs 1/2 cup bread crumbs
  • 1 egg 1 egg
  • 2 tbsp dry basil 2 tbsp dry basil
  • 2 tbsp fresh parsley 2 tbsp fresh parsley
  • 1 tsp fresh mint 1 tsp fresh mint
  • 1/4 cup water 1/4 cup water

Preparation

Mix egg, water, basil, parsley and mint toghether. Add 3/4 cup of cheese than mix with lentil and put in casserole. Cover with the left over cheese and cover the cheese with the bread crumbs. Bake in oven for 30 min at 300F. For the last 5 min, put under broiler until bread crumbs are golden brown.
