Roasted Pumpkin Seeds

Pumpkin seeds are a good source of protein and fiber, and have a delicious nutty flavor.

Servings: 6

Ingredients:

    2-3 medium size pumpkins, gutted, seeds set aside
    to cover spray cooking spray
    light sprinkle to taste any of the following: greek seasoning; seasoning sa< sea sa< bbq spice; curry + sa< salt and vinegar; white cheddar popcorn seasoning

Preparation:

Rinse and remove all pulp and strings from pulp before dry. Wrap seeds in paper towel to remove excess moisture. Spread seeds out in a single layer on a greased cookie sheet (cooking spray is recommended) Sprinkle lightly with desired seasoning. Place in pre-heated 350 degree oven for 20-25 minutes, turning one and checking progress five minutes before time is up. May require longer baking time if cookie sheet is full.
