My mother used to make this when I was a young girl. In those days she had access to fresh farm cream and this dish was a very special treat as well as easy to make. It is even better reheated as a midnight snack.

- 1/4 cup 1/4cupchopped onion
- 1/2 tsp 1/2tspeach of salt and pepper
- 3/4 cup 3/4cupvelveeta cheese
- 3 tbsp 3tbspolive oil
Peel and slice potatoes 1/4-inch thick and place in large casserole. Pour olive oil over potatoes. Add salt and pepper and mix well. Cover casserole and bake in 325ºF oven for 1 hour.
In saucepan saute onions in margarine until just transparent. Add flour and cook on medium heat for 2 minutes, mixing constantly.
