Ingredients

  • 1/2 lb thin spaghetti 1/2 lb thin spaghetti
  • 1 can diced tomatoes 1 can diced tomatoes

  • 1 tbsp olive oil 1 tbsp olive oil
  • 1/2 medium onion , diced1/2 medium onion, diced
  • 1/2 green pepper , chopped1/2 green pepper, chopped
  • 2 cloves garlic , chopped2 cloves garlic, chopped
  • 30 kalamata olives , halved30 kalamata olives, halved
  • 1 tbsp capers 1 tbsp capers
  • 1-1/2 inches anchovy paste 1-1/2 inches anchovy paste
  • 1 pinch hot pepper flakes 1 pinch hot pepper flakes
  • 1 tbsp dried basil 1 tbsp dried basil
  • 1 tbsp dried parsley 1 tbsp dried parsley

Preparation

Add salt & pepper to taste. Saute onion and green pepper in 1 T olive oil until soft. Add garlic, pepper flakes and anchovy paste and saute 30 seconds. Add olives, capers, tomatoes, basil, and parsley and simmer 6-8 minutes while pasta cooks. When pasta is nearly done, drain and add to sauce ... cook for another minute to finish pasta. Serve topped with grated parmesan.
