Spinach and Apple Salad

Ingredients

  • Dressing
  • 1/2 tbsp apple cider vinegar 1/2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard 1 tbsp Dijon mustard
  • 1 tsp honey 1 tsp honey
  • 3 tbsp extra virgin olive oil 3 tbsp extra virgin olive oil
  • 1 pinch dried thyme 1 pinch dried thyme
  • 1 tsp each salt and pepper , or more to taste1 tsp each salt and pepper, or more to taste
  • Salad
  • 6 cups baby spinach 6 cups baby spinach
  • 3 medium apples , peeled, cored and sliced3 medium apples, peeled, cored and sliced
  • 100 g Cheddar cheese , cubed100 g Cheddar cheese, cubed
  • 4 slices bacon , cooked and crumbled4 slices bacon, cooked and crumbled

Preparation

Combine all dressing ingredients.

Arrange spinach on 4 plates, fan apples and cheese cubes over spinach, top with dressing, then top with crumbled bacon.
