This recipe is nice as a side dish instead of potatoes or rice..and goes well with any type of recipe for chicken/pork or beef. Also works as a make ahead dish. This recipe can also be doubled successfully and freezes well..

Ingredients

  • 2 cups shredded old cheddar cheese
  • 1 box frozen spinach or fresh spinach, cooked, drained and chopped
  • 1-1/2 cups milk
  • 1/8 tsp pepper
  • 1/2 tsp salt
  • 3 tbsp flour
  • 3 tbsp butter
  • 1 8 oz pkg noodles
  • 1/2 tsp dry mustard
  • 1 pinch paprika

Preparation

Cook, drain and chop spinach; set aside Cook noodles in lightly salted water; drain and run under cold water then set aside. Make a general white sauce using milk, flour, salt, pepper and butter, including the cheese, taste and adjust seasonings; combine all ingredients in a large bowl.. stir to mix then pour into an 8" to 9" square baking dish. Sprinkle top with paprika for colour and a bit of flavour.. Bake in a 350 oven till hot and bubbly.
