This recipe is nice as a side dish instead of potatoes or rice..and goes well with any type of recipe for chicken/pork or beef. Also works as a make ahead dish. This recipe can also be doubled successfully and freezes well..
Ingredients
- 2 cups shredded old Cheddar cheese 2 2cups cupsshredded old cheddar cheese
- 1 box frozen spinach , cooked, drained and chopped1 1box boxfrozen spinach or fresh spinach, cooked, drained and chopped
- 1-1/2 cups milk 1-1/2 1-1/2cups cupsmilk
- 1/8 tsp pepper 1/8 1/8tsp tsppepper
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 3 tbsp flour 3 3tbsp tbspflour
- 3 tbsp butter 3 3tbsp tbspbutter
- 1 8 oz pkg noodles 1 18 oz pkg 8 oz pkgnoodles
- 1/2 tsp dry mustard 1/2 1/2tsp tspdry mustard
- 1 pinch paprika 1 1pinch pinchpaprika
Preparation
Cook, drain and chop spinach; set aside Cook noodles in lightly salted water; drain and run under cold water then set aside. Make a general white sauce using milk, flour, salt, pepper and butter, including the cheese, taste and adjust seasonings; combine all ingredients in a large bowl.. stir to mix then pour into an 8" to 9" square baking dish. Sprinkle top with paprika for colour and a bit of flavour.. Bake in a 350 oven till hot and bubbly.
