Stuffed Jumbo Tuna Shells

This is a dish I make for my children that they absolutely love. I sautee vegetables in it and they don't even notice they are eating them. It includes all 4 food groups and is a one dish meal. Enjoy as a family.

Ingredients

  • 2 cans solid white tuna 2 cans solid white tuna
  • 1/2 cup breadcrumbs 1/2 cup breadcrumbs
  • 1 whole beaten egg 1 whole beaten egg
  • 1/4 cup finely chopped onions 1/4 cup finely chopped onions
  • 1/4 cup finely chopped zucchinis 1/4 cup finely chopped zucchinis
  • 1/4 cup finely chopped carrots 1/4 cup finely chopped carrots
  • 1/8 tsp salt 1/8 tsp salt
  • 1/8 tsp pepper 1/8 tsp pepper
  • 1 jar tomato sauce 1 jar tomato sauce
  • 1 cup white cheddar cheese 1 cup white cheddar cheese
  • 20 jumbo pasta shells 20 jumbo pasta shells
  • 1/2 cup water 1/2 cup water

Preparation

Cook jumbo pasta shells in boiling salted water just till slightly tender, about 10 to 15 minutes. Rinse in cold water and drain. While pasta is cooking sautee onions, zucchini and carrots, season with salt and pepper and cook until tender, about 10 minuntes. In bowl combine tuna, bread crumbs, sauteed onion/zucchini/carrot and egg. Fill each shell with 1 tablespoon tuna filling. Arrange stuffed shells in 2 separate 13 1/2 x 8 3/4 x 13/4 baking dishes (do not crowd they will expand). Mix tomato sauce with water. Pour over shells. Sprinkle with cheese. Cover and bake at 350° for 30 minutes.
