it was created with friends in Vancouver when we were in our early 20's... its been perfected since...

Ingredients

  • 1 pkg large button mushrooms 1 pkg large button mushrooms
  • 1 can crabmeat 1 can crabmeat
  • 2 green onions , chopped2 green onions, chopped
  • 1/2 cup cream cheese 1/2 cup cream cheese or goat cheese
  • 1 pinch salt 1 pinch salt or Herbamare
  • freshly ground Pepper , to tastefreshly ground Pepper, to taste

Preparation

Prepare the mushrooms by wiping them down and removing the stems. Using a grapefruit spoon, scoop out some of the mushrooms flesh to create a recipient for the mixture. Save some of the mushroom scooped out, about 1 TBSP and chop this finely. Place the mushroom caps upside down on a parchment lined pan. In a bowl, combine the crabmeat,the green onion, the seasonings and add the chopped mushroom and the cheese. Fill each mushroom cap with the mixture. Cook at 375 for about 15 minutes and broil for a few additional minutes. Transfer to a serving platter and watch them disappear!!
