SWEET & SOUR SPARE RIBS #1

Ingredients

  • 4 lbs pork spareribs 4 lbs pork spareribs
  • 1/4 cup vinegar 1/4 cup vinegar
  • 3 tbsp soy sauce 3 tbsp soy sauce
  • 1 tsp sugar 1 tsp sugar
  • 1/2 tsp pepper 1/2 tsp pepper
  • 4 tbsp flour 4 tbsp flour
  • 2 tbsp vegetable oil 2 tbsp vegetable oil
  • Sweet and Sour Sauce:
  • 1/2 cup vinegar 1/2 cup vinegar
  • 1 cup brown sugar 1 cup brown sugar
  • 1 cup water 1 cup water
  • 1 tbsp cornstarch , (dissolved in 1/4 cup of water)1 tbsp cornstarch, (dissolved in 1/4 cup of water)
  • 14 oz pineapple chunks , optional14 oz pineapple chunks, optional

Preparation

Cut ribs into serving-size pieces and place in large pot. Cover with water and add vinegar. Bring to boil and simmer 1 hour, drain.

Make marinade of soya sauce, sugar, and pepper. Pour over ribs (use same pot) and turn frequently to cover each piece.

Remove ribs and shake in brown paper bag with flour. In a large skillet, add cooking oil and brown ribs (not too long or they'll dry out). Place in large casserole dish.

In a saucepan, combine sauce ingredients and cook over medium heat until slightly thick (if using pineapple, place tidbits in casserole with ribs) Pour over ribs and set in 350 degree oven for at least 1/2 hour. Flour on ribs will thicken the sauce. Serve over a bed of rice.
