While the chicken's cooking, you can prepare a salad and bread/rolls and eat those - by the time you're finished, the main meal is ready. Bon Appetit!

Ingredients

  • 4 boneless skinless chicken breasts, (fresh or frozen)
  • 1 bottle (350 mL) peanut sauce
  • 1 medium red onion, sliced
  • 1 pkg (227 g) sliced mushrooms
  • 1 medium green pepper, cut in strips
  • 2 cups uncooked rice
  • 1 cup water
  • 1/2 cup cashews, (optional)

Preparation

Place the chicken breasts in a baking dish. Add the uncooked rice to the baking dish. In a bowl, mix together all the remaining ingredients. Spoon this mixture over the chicken and rice. Cover and bake in a 375 degree oven for 50 minutes. If company's coming, you can throw some cashews on top of each serving.
