Tex-Mex Pasta Salad

Perfect for summer BBQs, this dish is inspired by seven layer dip.

Ingredients

  • 4 cups wagon wheel pasta , uncooked4 cups wagon wheel pasta, uncooked
  • 1/4 cup buttermilk 1/4 cup buttermilk
  • 1/4 cup ranch dressing 1/4 cup ranch dressing
  • 1 tbsp taco seasoning 1 tbsp taco seasoning
  • 1 tbsp freshly squeezed lime juice 1 tbsp freshly squeezed lime juice
  • 1 avocado , cubed1 avocado, cubed
  • 1-1/2 cups cherry tomatoes , halved1-1/2 cups cherry tomatoes, halved
  • 1 cup Cheddar cheese , shredded1 cup Cheddar cheese, shredded
  • 1/2 cup black olives 1/2 cup black olives
  • 1/4 cup green onions , sliced1/4 cup green onions, sliced

Preparation

Prepare pasta according to package directions until tender. Drain, rinse in cold water, drain again, and set aside in large bowl. While waiting for pasta water to come to a boil, in a small bowl, combine buttermilk, ranch dressing, taco seasoning and lime juice, and set aside. Toss cooled pasta with dressing mixture, and in layers, top with avocado, tomatoes, cheese, olives, and green onion to resemble seven layer dip. Tip: if preparing ahead of time, either leave addition of avocado until serving time, or, toss cubed avocado in a little additional lime juice to prevent browning.
