Turkey Lasagna Roll-Ups

Looking for an Italian pasta dish without the pasta? This comfort dish has all the flavour of lasagna, without all the calories. Serve these bundles with whole grain bread and a side salad for a delicious, yet simple meal!
Ingredients

4-6 pieces turkey scallopine
1 1/2 cups Canadian ricotta cheese
1 egg
1 clove garlic, minced
1 cup frozen, chopped spinach, thawed
1/2 lb ground turkey
1-1/2 cup shredded Canadian mozzarella cheese
1/2 tsp each salt and black pepper
2 cups pasta sauce
1 tbsp vegetable oil
Preparation
In a non-stick skillet, brown the ground turkey on medium-high heat. Drain off excess fat if necessary. Place in bowl and let cool 5 minutes. Add ricotta cheese, egg, garlic, spinach, and salt and pepper. Stir to combine filling. Place scallopine vertically on work surface and add 1 to 2 tbsp of filling at one end (depending on size of scallopine). Roll up and secure with toothpicks. Add vegetable oil to nonstick skillet and heat over medium-high heat. Brown roll-ups on all sides. Add 1/2 cup of pasta sauce to bottom of a baking dish and add browned roll-ups. Cover with remaining sauce and sprinkle with mozzarella cheese. Bake in 375ºF oven for 25 to 30 minutes and cheese is brown and bubbling.
