1 large Turnip. Carefully cut turnip in half peel and cut up into 2 inch pieces
Preparation
Cook turnip in boiling water with 1 tsp salt until cooked about 20 minutes. Drain water. Mash turnip with potato masher add 2tbsp butter or margarine and 2 beaten eggs. Beat with electric mixer for 1 minute. Put into dish and leave in fridge overnight or 4 hours. In another dish, add 3 tbsp brown sugar, 3 tbsp flour, 1tsp baking powder, salt and pepper to taste. Leave dry mixture overnight or 4 hours in container covered. Next day add dry ingredents to turnip mixture; put into buttered casserole dish; add buttered bread crumbs(optional). Bake 30 minutes in 350 oven. Excellent side dish.
